The determination of glycemic index of foods is a complex process, and involves considerable scientific effort. Unfortunately, authors are often overly possesive of their lists, and most object highly to there lists being quoted. Thus, exact numbers for glycemic index are not given, rather the foods are arranged in three lists of Low, Moderate, and High.
Note that the list is pertinant only to carbohydrates: concentrated fats and proteins are not included as they are considered to be low glycemic index.
